Vinification and aging:
This rosé wine was vinified following traditional methods of direct tank bleeding. The grape juice obtained after crushing remains in contact with the grape skins for between 6 and 12 hours at a controlled temperature of 10°C.
After this maceration, half of the must is placed in a stainless steel tank where it ferments at a controlled temperature of 14-16°C to preserve the aromatic complexity of the four grape varieties.
The other 50% is made by direct pressing with settling by flotation, and fermented for 9 days at a controlled temperature of 16ºC in a different stainless steel tank.
Tasting notes:
Color is an attractive bright pink/salmon hue.
The nose offers aromas of apricot, peach, strawberry, currant with notes of banana and pear. There is also a floral component of roses and violets.
