First week of October
Vinification and aging:
Grape bunches were harvested by hand and selected in the vineyard. They were then transported to the winery in small-capacity trailers, de-stemmed, and fermented in open 500-liter French oak barrels with frequent tapping-down.
Low extractive maceration techniques were employed to maintain freshness. Alcoholic fermentation lasted approximately 18 days at 24ºC using selected yeasts.
Once fermented, the wine was pressed and half of the production was moved to new French barrels, where malolactic fermentation took place. The other half was kept in the tank.
The wine then underwent 12 to 14 months of aging in semi-new barrels (100%), and was further aged in the bottle for at least 12 months before market release. This wine is certified Vegan.
Tasting notes:
Appearance: medium-bodied wine, garnet color with ruby rims. Clean and transparent.
Bouquet: intense aromas with notes of red fruits, strawberry and raspberry, strawberry yogurt, as well as slightly floral touches of jasmine and violets. In the background, the typical aromas of wood aging appear, with notes of leather and smoke.
Palate: powerful but very elegant with a silky entry. In the mouth toasted and smoky wood predominates, although this does not block the elegant floral and fruity notes. Very smooth on the palate: a fine and elegant wine in which the red fruit persists throughout the long aromatic finish.
